3/4 cup olive oil
1/4 cup white wine or sherry vinegar
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
1 clove garlic, minced
1/2 teaspoon freshly grated orange zest
Salt and pepper to taste
4 to 6 cups mixed greens
1 pound boiled or steamed shrimp, peeled and deveined
2 large Ruby Red grapefruits, peeled and sectioned
2 Navel oranges, peeled and sectioned
1/3 cup chopped peanuts, toasted
1. In a medium bowl whisk together olive oil, vinegar, juices, garlic and zest. Season to taste with salt and pepper.
2. In a large serving bowl, combine greens, shrimp, grapefruit, oranges and peanuts, tossing gently. Drizzle with vinaigrette and serve immediately.
