Pittman and Davis Ruby Red Grapefruits are the stars of gourmet citrus. This sweet and satisfying recipe uses this delicious fruit to make yummy bars that are good for dessert, or any time.
- ¼ Cup Sugar
- ½ Cup Butter, softened
- 1 Cup Flour
- 2 Eggs
- ¼ tsp Baking Powder
- ¾ Cup Sugar
- 2 Tbsp Flour
- 2 tsp Pittman and Davis Ruby Red Grapefruit Zest
- ½ Cup Pittman and Davis Ruby Red Grapefruit Juice
- Pink Food Coloring
- 2-3 Tbsp Powdered Sugar
Preheat oven to 350 degrees. Combine crust ingredients in a mixer, and process on medium speed until a lose, crumbled dough is formed. Press the dough into a single, uniform layer in the bottom of a 9”x9” baking pan. Bake the crust for 15 minutes at 35o degrees until lightly browned. While the crust is baking, prepare the filling so it is ready when the crust is browned.
Combine eggs, sugar flour, and baking powder in a mixing bowl and whisk together until fluffy. Add Pittman and Davis Ruby Red Grapefruit Juice, Grapefruit Zest, and three to six drops of food coloring. Whisk until filling is mixed well.
When the crust is done, remove from oven. Spoon filling onto hot crust, then bake for 15 to 20 minutes or until edges are browned. Remove from oven and allow to cool to room temperature. Dust with powdered sugar, and refrigerate for at least 1 hour. Cut into bars and serve cold.
