2 Tbs Butter
4 Cups sliced Shitake or Baby-bella Mushrooms
1/2 tsp Salt
1/4 tsp Pepper
8 Slices whole Grain Bread, lightly toasted
2 Ripe Pears, cored, seeded, and sliced thin
8 Slices Provolone Cheese
Preheat broiler. Heat butter over medium-high heat in a large skillet or cast iron frying pan. Add mushrooms and sauté for 5 to 7 minutes, until tender. Stir occasionally to prevent sticking. Add salt and pepper to taste.
Line a cookie sheet or broiler pan with foil. Place toasted bread slices on foil-lined pan. Top each slice with a layer of mushrooms, then pear slices, then top with cheese. Broil on top rack for 2 to 3 minutes, until cheese is slightly browned. Serve with salad or a veggie tray and enjoy.
