Fast, easy, healthy and delicious…this recipe ticks all the boxes for a weeknight dish. Pittman & Davis’s own mild Sweet Onions (you can use either our Texas 1015 Onions or our Sweet Georgia Onions in this recipe) are so incredibly buttery and delicious alongside the tender, flavorful chicken spiced with paprika, you may want to throw in one or two more to ensure you have plenty!
This dish is so good it’s hard to believe it’s so easy to prepare – about five minutes to put together, you’ll have dinner ready in under an hour!
Ingredients:
- 2 Pittman & Davis Sweet Onions, sliced thin
- 3-3½ lbs. whole chicken, cut into 8 pieces
- 2 Tbsp. olive oil
- 2 tsp. sea salt, coarsely ground
- ½ tsp. ground black pepper
- 1 Tbsp. paprika
Directions:
- Preheat oven to 450°F.
- Place onions and chicken pieces in a 9″ x 13″ baking dish or roasting pan. Drizzle with oil, season with salt and pepper, and toss to coat.
- Arrange chicken on top of onions (skin sides up). Sprinkle with paprika.
- Bake, stirring onions and basting chicken occasionally, until juices run clear when chicken is pierced with the tip of a sharp knife (about 35-40 minutes).
- Serve immediately with side of your choice (rice, potatoes, cauliflower, squash, etc.).
