When Honeybell season arrives, we find every excuse to enjoy their bright, juicy sweetness. These Honeybell No-Bake Cheesecake Parfaits are layered with creamy cheesecake filling, buttery graham cracker crumbs, and fresh Honeybell pieces for a light, refreshing dessert bursting with citrus flavor.

Ingredients
For the Parfaits:
- 8 oz cream cheese, softened to room temperature
- ⅓ to ½ cup powdered sugar (adjust to taste)
- ½ cup heavy cream
- 1 cup graham crackers, crushed (about 7-8 full crackers)
- 2-3 Pittman & Davis Honeybells, peeled and cut into small pieces
Optional Garnish:
- Extra Honeybell pieces
- Fresh mint leaves
Directions
- Make the cheesecake filling: In a medium bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy, about 2 minutes. Start with ⅓ cup sugar and add more if you prefer it sweeter.
- Whip the cream: Add the heavy cream to the cream cheese mixture and beat until light and fluffy, about 2-3 minutes. The mixture should hold soft peaks.
- Prepare the crumbs: Place graham crackers in a sealed plastic bag and crush with a rolling pin, or pulse in a food processor until you have fine crumbs.
- Prep the Honeybells: Peel Honeybells, remove any seeds, and cut into small bite-sized pieces. Pat dry with a paper towel if they’re very juicy.
- Assemble the parfaits: Using clear glasses or parfait cups, create layers:
- Start with 2 tablespoons graham cracker crumbs
- Add a layer of cheesecake cream (about 3 tablespoons)
- Add a layer of Honeybell pieces
- Repeat the layers once more
- Finish with a final layer of cheesecake cream on top
- Garnish and chill: Top each parfait with extra Honeybell pieces and a fresh mint leaf. Refrigerate for 20-30 minutes before serving to let the flavors meld.
