Tex-Mex cuisine are fascinating and ever-evolving food creations created by Tejanos (Texans of Mexican heritage who lived in Texas before it became established as a republic). These dishes are Americanized Mexican food that is characterized by ingredients easily available in the US but scarcely used in Mexico – flour tortillas, beef/pork, shredded cheese, beans, and spices like cumin, chili powder and pepper.
The term Tex-Mex did not start out as a culinary term. The term is a hyphenated name for the Texas Mexican Railway that was chartered in Southern Texas in 1875. Newspapers in the 19th century published the abbreviated names of railroads in train schedules section.
How to make a Tex Mex Baked Blooming Onion

Ingredients
For the blooming onion:
1 large Pittman & Davis Sweet Onion
¾ cup plain Panko breadcrumbs
1 tablespoon Old El Paso® original taco seasoning
2 eggs, beaten
For the garlic-adobo dip:
⅓ cup sour cream
2 tablespoons milk
2 teaspoons adobo sauce
½ teaspoon minced garlic
For the creamy avocado-ranch dip:
1 small avocado, mashed
½ cup ranch dressing
Directions
- To make garlic-adobo and avocado-ranch dips, mix ingredients for each in separate bowls and stir until well combined.
- Preheat oven to 400ºF. Meanwhile line a baking sheet with parchment paper then set aside for later.
- Cut ½ inch off the top (stem side) of the onion and then remove the outermost layer while keeping the root intact.
- Create the sections that will form the petals by slicing the onion from the top going down to about 1/8 of an inch from the root and create 16 equal sections. Once done creating 16 sections spread them apart until they start looking like flower petals.
- Transfer sectioned onion on prepped baking sheet. Using a small bowl, mix Panko breadcrumbs with taco seasoning. Liberally brush a petal with beaten eggs then sprinkle breadcrumbs immediately right after. Repeat process until all sections and petals are well coated.
- Cover baking sheet with domed aluminum foil and bake for 5 minutes. Once done, remove cover and bake for another 10 minutes or until onion is somewhat crispy at the edges.
- Remove from oven and serve with dipping sauces.
