This is the perfect side dish for lunches, or serve with low calorie pita chips for a snack. To make grapefruit salsa just combine Ruby Red grapefruit with some raw red onions, mint, water chestnuts, ginger root, green onions, lime juice and a hint of sugar. Ruby Red Grapefruit Cupcakes – These cupcakes are perfect for birthday parties because kids love them and they are lower in fat and calories than traditional cupcakes. To make these citrus based cupcakes use a traditional white cake mix but instead of using water to make the cake mix use fresh squeezed grapefruit juice. You can also pour it over ice cream or pancakes or mix it into some vanilla yogurt. To make it combine freshly squeezed grapefruit juice with one packet of pectin and sugar. Boil together, and place in a jelly car with a sealed lid. This unique jelly also makes a great and inexpensive Christmas gift.
