Fresh Mandarins from Pittman & Davis are in season, and if you’re looking for more ways to incorporate them into your day, and this fizzy recipe using fresh-squeezed mandarin juice is a great way to brighten up a lazy afternoon on the deck or a fun Saturday night! Add your favorite brand of tequila or vodka for a grownup cocktail or leave it out to create “mocktails” the whole family can enjoy. Serves 4.
Ingredients:
- 10 Pittman & Davis Gold Nugget Mandarins or Honey Mandarins
- Fresh mint leaves
- ¼ c. lime juice
- 1½ c. club soda or sparkling water
- ½ c. vodka or tequila or vodka (optional)
- Ice
Directions:
- Chill four glasses in the freezer (at least 30 minutes; for a frosted effect, chill for 60 minutes minimum).
- Juice 8 of the mandarins (should yield about 2 cups of juice). Thoroughly chill juice in the refrigerator. Peel and segment the remaining mandarins and set aside.
- Add a few mint leaves at the bottom of each glass. Pour a half cup of chilled mandarin juice plus 1 tablespoon of lime juice into each glass and stir to combine.
- If using alcohol, add 2 tablespoons to each glass and stir to combine.
- Add ice and divide the mandarin segments among the glasses and mix gently.
- Garnish with mint leaves and serve.
