Turn our Paradise Pineapples into a healthy, tropical summer drink! Refreshingly sweet and tangy and loaded with nutrients, homemade pineapple juice is easy to make and great on its own or used to make other drinks (as well as in your favorite Asian-inspired or barbecue recipes). Enjoy this pineapple juice recipe alone or combine it with fresh orange juice for an extra-special breakfast treat, blend it with ginger tea for added spiciness, or make pineapple lemonade to beat the summer heat. And for summer nights, mix it with coconut, rum and lime juice for the classic cocktail, piña colada!
Ingredients:
- 1 Pittman & Davis Paradise Pineapple
- ½ c. water
- 2 Tbsp. sugar, optional
- 1-2 Tbsp. fresh lemon juice, optional
- Ice cubes
Directions:
- Slice top and bottom off pineapple, then lay fruit on on a cutting board and use a long, sharp knife to strip off the leathery skin. Once the skin is off, remove any remaining “eyes” with a small paring knife. Cut the peeled flesh into chunks.
- Add the pineapple chunks and water (along with sugar and lemon juice, if using) to the jar of a high-speed blender or food processor. Blend until smooth.
- Use a fine-mesh strainer to squeeze as much of the juice from the pulp as possible. Adjust taste and thickness with additional water, sugar and lemon juice as desired.
- Pour immediately into four glasses filled with ice cubes. Garnish with chunks of pineapple and fresh mint leaves if desired and serve.
