Make Delicious and Healthy Kids Birthday Treats with Grapefruit

With childhood obesity rates skyrocketing parents are looking for healthy alternatives to traditional birthday cakes, cupcakes, and other treats. Birthday treats made with grapefruit and other citrus fruits are just as tasty as traditional birthday treats, but they are a lot healthier for kids and parents. As an added bonus parents who serve grapefruit cake or other citrus fruit treats at a birthday party won't have to worry about the kids getting so worked up on sugary treats that they misbehave. There are a wide range of grapefruit and orange cakes that can double as beautiful birthday cakes for kids. Cupcakes are always a big hit with kids and cupcakes are easy to make with grapefruit juice or orange juice substituted for water. Here are some of the most popular citrus fruit birthday treats for kids as voted by parents:

Simple Grapefruit Cake – This easy to make cake is fast, delicious, and is delicious topped with a light cream cheese frosting and candied grapefruit or orange peel. Or, use brightly colored segments of Ruby Red grapefruit and deep orange tangerines to add color to the top of the cake. Make a simple cake batter using flour, sugar, eggs, baking powder, salt and milk. Instead of using water in the recipe use freshly squeezed orange or grapefruit juice. Then mix in a few tablespoons of grapefruit zest into the mix. Bake just like you would a traditional layer cake, frost, top with fruit or candied peel, and serve. The kids will love it and they will be getting an extra serving of fruit just from eating the cake.

Ruby Red Grapefruit Cake – This cake has a brilliant red color that you can enhance with a little food coloring. It's a great substitute for red velvet cake and has a light, airy taste. Mix up a package of white cake batter according to the directions on the package, leaving out the water. Blend in about a cup of Ruby Red grapefruit juice instead of water. Add a little vanilla, and a few tablespoons of grapefruit zest. If you're worried that it might be too tart use half Ruby Red grapefruit juice and half sweet citrus juice, like Clementine juice. Then just add a little red food coloring to keep the brilliant ruby red color. Bake, and top with Ruby Red grapefruit segments and whipped cream. This is a great cake to serve for birthdays that fall near the winter holidays.
