Old-Fashioned Caramel Apple Recipe

Ingredients
- 8 Pittman & Davis Fuji Apples, at room temperature
- 8 wooden craft sticks (for handles)
- 2 cups packed brown sugar
- 1 cup butter
- 1 cup light corn syrup
- 1 can sweetened condensed milk (14 ounces)
- 2 teaspoons natural vanilla extract
Preparation
- Trim any protruding stems from the apples using heavy-duty scissors.
- Bring a stockpot with about 8 cups of water to a boil. Submerge each apple in the boiling water for 2 to 3 seconds, ensuring all sides are covered. Dry the apples on a clean towel to remove any wax or oils from the skins.
- Once the apples have cooled, insert a wooden craft stick into each, positioning the apple stem-side-down and pushing the stick about ¾ of the way through.
- Line a cookie sheet with parchment paper. In a saucepan over medium-high heat, partially melt the butter. Add brown sugar, condensed milk, and light corn syrup, stirring slowly but constantly.Bring the mixture to a boil, then reduce heat to medium and stir frequently for about 30 minutes until the temperature drops to 248 degrees F (120 degrees C). Remove from heat and stir in the vanilla.
- Dip each apple into the caramel mixture, fully coating them. Using a spoon can expedite the process. Place each coated apple upright on the parchment paper/cookie sheet.Allow the apples to cool until the caramel sets. Once set and somewhat dry, refrigerate until firm to the touch. Wrap them in plastic wrap for sharing and storing, with a refrigeration shelf life of up to a week.
