Many high end restaurants feature grapefruit ice cream at some point because it's such a simple yet delicious treat. You will need an ice cream maker to make this ice cream, and a lot of fresh grapefruit. If you use Ruby Red grapefruit it will be quite sweet. If you choose another type of grapefruit you might want to add some fresh orange juice into the syrup to make it sweeter, or just use more sugar. Using vanilla sugar is a great way to boost the refreshment of the final taste. Making grapefruit ice cream is similar to making other types of ice creams and recipes are not hard to find. No matter what recipe you choose there are ways to tweak the taste of finished ice cream to be more delicious. Here are some of the tips that people who have made and enjoyed grapefruit ice cream shared:

Make a simple syrup first – Instead of just plopping all the ingredients into the ice cream maker take the time to make a simple syrup of grapefruit juice or tangerine or orange juice mixed with sugar first. Don't strain the juice so well that no pulp comes through. Those little bits of pulp will caramelize in the simple syrup and will add intense bursts of grapefruit flavor as well as a lovely sweet crunch to the ice cream. Use the simple syrup in conjunction with the ground up flesh of the grapefruit to flavor the ice cream.

Chill first – Once you have made the syrup and mixed in whipped grapefruit flesh and any other ingredients you want to add mix in some half and half or heavy cream until just warm. Then chill the whole mixture i n the fridge for at least four hours. Bringing down the temperature of the mixture is essential to making the ice cream firm later on. Because there is a lot of sugar in grapefruit ice cream it's necessary to thoroughly chill the mixture that will be used to make the ice cream before putting it into the ice cream maker. When it's completely cooled you can put it in the ice cream maker and proceed using a normal ice cream recipe. Grapefruit ice cream will always taste great if you take the time to do this step and cool everything down completely before making the final ice cream.
